Hope you all had a nice week and a happy Groundhogs Day! Although Punxsutawney Phil predicted an early spring it still feels like winter with the evenings getting chilly. We’ve had frost the past several nights which is unusual for North Carolina. To keep us toasty this week was all about easy belly warming comfort food. Also, Ruby was extra cranky this week as I think she’s working on her two-year molars (poor bug!) so recipes that I could quickly make that she was sure to devour were essential. To help I pulled out my trusty instant pot three times this week. If you don’t have one – get one! You won’t regret it!

Monday: Salsa chicken tacos– All you need to make this delicious recipe is chicken and a jar of your favorite salsa. The result is super tender shredded chicken that can be used in tacos, quesadillas or burritos.
Tuesday: Pancakes and Strawberries with a side of bacon- I LOVE breakfast for dinner and I often find myself making pancakes or omelets when I’m out of ideas that night. I’ve tried many pancake recipes and this one is my absolute favorite. The pancakes are light and fluffy and always come out perfectly.
Wednesday: Shrimp scampi with instant pot risotto– Did you know that you can make risotto in an instant pot in 10 minutes? Typically this dish takes close to an hour and requires constant supervision to get right. It’s perfect topped with shrimp cooked in butter and wine for sophisticated pairing.
Thursday: Salsa chicken quesadilla – I used the leftover salsa chicken from Monday with some black beans, cheese and avocado to make this family favorite. My daughter loves quesadillas!
Friday: Lasagna soup with garlic bread – All the flavor of lasagna with half the effort. I used ground turkey in this recipe and it was perfect. This is delicious topped with a scoop of Ricotta and warm garlic bread.
Saturday: Sushi dinner out- My in-laws were in town this weekend so we treated ourselves to dinner out this night. It’s a lot easier to brave a restaurant with a toddler when you have a few extra sets of hands around!
Sunday: Instant pot lemon chicken with quinoa- I pulled chicken right out of the freezer for this one and paired it with a simple quinoa that I seasoned with garlic, Italian seasoning and Parmesan cheese.
Also, on most nights (except pancake night) I typically heat up a steamable bag of frozen vegetables as a side- it’s a lot easier for me than making steaming or sautéing veggies from scratch every night.
