Happy Valentine’s day mamas! I hope you got to spend some time with your special someone.
We decided to have a romantic fondue dinner on Valentine’s day since we didn’t have a babysitter this weekend for a date night. Romantic might be a bit of a stretch since we had shared it with our sassy toddler.
We received this electric fondue pot for a wedding present and don’t use it nearly enough. When finally we do I love a good cheese fondue but this time we tried a cooking broth. One of our favorite date nights before having Ruby was dinner at the Melting Pot and this is a little bit like that but at home in our comfy pants 😊 I always have fun selecting the different ingredients and then cooking them ourselves. This time we went with shrimp, steak and kielbasa sausage as well as potatoes, broccoli and mushrooms. I also made a homemade yum-yum sauce for dipping. Delicious and memorable!
Here was this week’s dinner menu:
Monday: Cauliflower Mac and Cheese- I love to mac and cheese from scratch and this one if a great way to sneak in some veggies for those picky eaters. The roasted cauliflower is both yummy and healthy!
Tuesday: Greek Turkey Burgers with Homemade Tzatziki Sauce and French fries- We’ve cut way back on eating red meat in our home so often when we’re craving a burger, I get out the ground turkey. These are my favorite turkey burgers to make. The salty feta cheese and Tzatziki sauce are perfect compliments to the turkey and give this burger a punch of Mediterranean flavor.
Wednesday: Creamy Chicken Chili- I knew I’d be home late from work tomorrow so I pulled out my crock pot to make a giant pot of chili. This creamy chicken version is on regular rotation in my house and has also one multiple chili cooking contests. We like ours topped with a cheese and sour cream with a side of skillet cornbread.
Thursday: Chicken Chili Leftovers – We had plenty of chili left over from the night before so for a different twist I made some white rice to seve the chili on. I added sour cream and avocado slices for an easy and filling meal.
Friday: Broth Fondue with shrimp, steak, kielbasa and veggies– All the romance of a fondue dinner at home but in your sweat pants- hooray. We finished this with a bottle of red wine and brownies after the baby went to bed.
Saturday: Pizza night out with friends
Sunday: Grilled Cheese and Tomato Soup- I felt a little lazy tonight so brought out the Campbell’s tomato soup and quickly made some gooey grilled cheese. You might ask-what my secret is for a delicious grilled cheese? Mayonnaise! I always put mayonnaise on the inside of both slices of bread along with a melty cheese like American or cheddar. It’s the way my mom did and it’s the way I do it too!
